- Rice is generally higher in starch content, making it more sticky and flavourful when cooked.
- It cooks faster and can be used to make rice porridges and congees, which need long cooking times.
- It is usually used in sushi, rice dishes, and other dishes that require a sticky texture.
Note: During cooking, the level of aroma decreases. Soaking the rice for 30 minutes before cooking permits 20% shorter cooking times and preserves more of the aroma.
